The honest case for marketplaces
Marketplaces are genuinely good at one thing that is hard to replicate: putting your restaurant in front of people who have never heard of you. For a new outlet that is real value.
The problem is that the pricing model does not distinguish between that first order and the fiftieth. You pay discovery rates for customers you have already won.
